Dough Chunker

This machine takes dough from a mixer and feeds to a divider. We created it in 1992 to deliver higher volumes of dough so that the newer larger bakeries could produce up to and including 200 loafs of bread a minute. It started a revolution in the industry. Is still the best known and best regarded in the industry. It is the cleanest running which is important in the food industry, reliable as they are made solid so there are no issues and are far more reliable that all other machines, most desired by all customers as it is most commonly used by the largest firms. We have continuously improved over the years but basic design and operation is the same but just gets better each year when we roll out the improvements.

- Clean design – no folded edges where debris can sit and ferment
- Seamless hopper top to bottom no non cleanable spots and no gasketed joints.
- Heavy solid stainless portioning rotors that have to date lasted 32 years and going strong – others have a hard time lasting 4 years and are 40,000 to replace and take 8 to 10 weeks to get. We sell spares to allow for re-coating but never for replacements
- Rotor jam protection that stops the machine if foreign materials are ingested. Prevents damage.Removable lower conveyor with flip nose to allow belt removal for ultimate full access cleaning.

- Predictable dough feed that lets operators see dough level in the hopper by looking at the control screen – set points for hopper fill, full, and shut down are all programmed in on setable recipes. gives direct vision of hopper level so no one has to climb up and look or try and look thru dirty mirrors that are a manufacturing hazard.
- Hopper level balance so that when it is time for a change over, both machines run out at the same time – minimizes change over stopped time. Oven does not run ½ empty and burn buns.
- If hoppers get starved for dough divider (s) stops before it can entrain air. Removes the need for operators to pull all under weight portions from line, clean up, purge dividers and restart and return all dough to mixer or throw out.
- Dough portioners that allow one to go from a full to partial chunks. Bread operation can typically take full chunks. But buns are best run when they can be feed smaller dough portions so that one does not get stagnant dough on the hopper sides.
- Chunker hopper cattle swing gate safety access to allow operator full access to the hopper without compromising safety
- Removable lower conveyor that allows for 1 hand belt removal for full unrestricted cleaning
- Removable front lower conveyor scraper
- Dough overhead conveyor switch from fast delivery to reservoir to hold several hundred pounds of dough in reserve. Best suits operation where sometimes dough feeded has to pull away from feed system to get the dough

Cookie Machines
Original machines form Charlie Werner date back to the 1930’s but we perfected them. Superior feed roller design for high traction yet gentle on dough. Large Industrial Scale that can roll in and out from over a band oven or a frozen dough conveyor. We can bolt it to a conveyor if you would really like it that way but everyone else likes the roll in and out configuration. Large diameter solid stainless feed rollers.

Artisan Rounder
Meant for high speed rounding of artisan products such as hearth and or rye breads where a fully encapsulated or dough ball that has received rounding on all sides is used:
- Advantages are better rounding control higher achievement of rounding on all sides.
- Does not require floor to carry out rounding so no rounding swirl in bread from flour usage.
- Higher output up to 100 loafs per minute per lane.
- No wasted flour – reduced or eliminated flour used and no rounding bits are generated. Which can add up to 100.00 dollars per day or 30,000 per year.
